A new take on a classic Italian recipe, with the addition of a superfood, rich in minerals and heart-healthy fats.
Ingredients per person:
Boil water in a large pot, then add the shirataki and keep boiling for 10 minutes (you can leave it longer, as our shirataki are never overcooked).
Strip basil leaves from the stems and add to a food processor along with avocados, mixed nuts and salt; pulse until finely chopped.
Drain the shirataki and put them in a flat pan with a bit of cooking water, a pinch of salt and a pinch of curry. Stir-fry for 2-3 minutes and add the pesto while mixing thoroughly.
Serve with a pinch of ground mixed nuts on top.
